INGREDIENTS

Rice  –  ( raw 1 cup )

Onion  – 1 slice

Tomato  – 1 large chopped

Mixed  veg  – ¾ cup ( beans, mushrooms, brocolli, ½  carrot )

Mint  leaves  – 2 tbsp ( finely chopped )

Red chilli powder  – ½  tsp

Garam  masala  – ½  tsp

Ginger  garlic paste  – ½  tsp

Salt  –  to taste

 

For  tempering :-

 

Oil  – 1 ½  tbsp

Mustard  seeds  – ½  tsp

Cumin  seeds  – ½  tsp

Clove  – 2 pc

Cinamon  – 1’’ stick

METHOD

  • Soak brown rice over night.
  • Then cook with 4-5 cups of water until done, then drain the water using colander, drain completely & spread in a plate & keep aside.
  • Wash & chop vegetables to desired shape & size.
  • Heat oil in a non stick pan, add tempering ingredients & wait till it pop.
  • Then add ginger garlic paste & saute with onions & mint leaves for 1-2 min. till golden brown.
  • After that add tomato & saute till it turns soft & tender.
  • And then add mixed veg & turmeric powder & saute for 1-2 min. & then add chilli & garam masala powder & stir fry in medium heet & cook covered for 3-4 min.
  • Now add cooked brown rice, mix everything & again cook covered for a minute.
  • Serve hot in a plate with garnishing of coriander leaves.
